The production process of the high-quality organic olive oil begins with the harvest of the olives. These are picked by hand by the farmer and his team. The harvest is brought to the oil mill in jute sacks within a few hours. The olives are washed and ground there to create a paste. In order to maintain the high quality of the olives for the high-quality organic olive oil, it is important that the olives are ground quickly during the process.
The harvest takes place from mid-November to mid-January. To avoid damage to the olive tree, the harvest begins early. This allows the tree to recover and deters pests. For optimal quality and exquisite taste, choosing the optimal harvest time is an art in itself. Our farmer puts his heart and soul into this topic. He knows exactly how to perfect his harvest in order to produce high-quality organic olive oil.
The resulting olive paste is put under pressure in a centrifuge in the so-called cold extraction - a modern, gentle and purely mechanical process for obtaining olive oil - so that the oil is extracted. During the entire process, care is taken to ensure that the maximum temperature of 27 degrees is not exceeded. This preserves the valuable ingredients and aromas. The high-quality organic olive oil obtained is stored in large stainless steel tanks to protect it from light and oxygen. To remove suspended matter and produce a clear liquid, the olive oil is filtered before being bottled in dark bottles.
Each of the previous steps is of enormous importance for the production process of our exquisite and high-quality olive oil in terms of both quality and taste.
