Typical Tunisian biscuits

Recipe from my grandmother “Bachkoutou”
A tribute to my grandparents

The "Bachkoutou" biscuits can be found in almost every Tunisian household and are enjoyed for breakfast and/or in the afternoon with afternoon coffee. When I spent the summer holidays with my grandparents, I was allowed to help my grandmother bake. My grandmother always prepared large quantities and my grandfather then took them to the baker to bake. I can still remember the happy faces of my grandparents and the delicious smell of the biscuits. This wonderful memory feels like it was yesterday. This recipe is a tribute to my grandparents, which gave me this wonderful memory of them.

Ingredients:

  • 400 g organic spelt flour
  • 150 g organic coconut blossom sugar
  • 0.20 L Mycena Organic Olive Oil
  • 2 organic eggs
  • 1 packet of organic vanilla sugar
  • 1 packet of organic baking powder
  • 2 tbsp ground organic sesame fennel

Preparation:

Beat organic coconut blossom sugar, organic vanilla sugar and organic eggs until creamy.

Stir in Mycena organic olive oil well.

Add organic spelt flour, organic baking powder and ground organic fennel seeds and stir in as desired. The dough should be easy to shape.

Roll out the dough thinly and cut it by hand into 7 cm biscuit pieces. Alternatively, you can make Krinkel out of it. In Tunisia, a biscuit press is traditionally used.

Place the cookies on a baking tray lined with baking paper and bake in a preheated oven at 170 degrees top and bottom heat for about 12-15 minutes.
