A traditional Tunisian salad
Ingredients:
- 6 large organic green peppers
- 2 large organic tomatoes
- 2 organic garlic cloves
- Salt, pepper, 1/2 tsp cumin, 1/2 tsp coriander
- 5 tbsp Mycena organic olive oil
- 2 hard-boiled organic eggs
- Organic tuna fillet in a jar
Preparation:
Wash tomatoes, halve, wash peppers, remove stem and seeds and halve.
Peel the garlic.
Place the vegetables (peppers, tomatoes and garlic) on a baking tray and bake or grill at 220° until browned. Turn the vegetables occasionally.
Remove the skin from the cooked vegetables and chop them finely (with a sharp knife or briefly with a blender).
Mix the vegetable mixture with salt and spices and chopped garlic. Pour Mycena organic olive oil over the vegetables and decorate with hard-boiled eggs (quartered) and tuna.
In Tunisia, salade mechouia is eaten with baguette. It is very popular as a side dish to grilled fish (sea bream, sea bass, etc.) or grilled lamb fillet.
